Cookbooks Throughout History: Foodie Treasure Troves

(Author’s note: keep in mind that the word “recipe” came from the word “receipt,” which you will see used in early books.)

Our fascination with cookbooks has virtually no limit. Celebrity chefs make millions on their beautifully illustrated cookbooks, many of which are never really used other than for fantasy. And basic classics like Better Homes & Gardens, Betty Crocker or Pillsbury will always sell. But before the nineteenth century, if a young woman or servant wasn’t taught culinary skills growing up, she was in for a rough trial-and-error period as she found herself pressed into service with a new husband and growing family. If she was able to read, she might find a few well-worn stained pages to consult but that was the extent of it.

Early cookbooks were for the wealthy only (especially royalty) and most of the castle kitchen staff couldn’t read. Of course very early cookbooks proved to be a bit daunting for the average farmer’s wife, like Forme of Cury (14th century) by the Master Cooks of King Richard II of England. Seems the portions were a tad overwhelming and one meal might require spending an entire year’s food budget for the average peasant. In Germany and England many of the books were written by women, who saw what was needed in households with fewer or no servants, and understood what made it possible to simplify the dishes with less expensive ingredients.

So for basic bona fide cookbooks, here are some which stand out, many of which are still in publication today:

Hannah Glasse’s The Art of Cookery Made Plain and Easy (1747) was the top selling English-language cookbook for over a century, and had a major influence on early American cooking; even Martha Washington had a copy in her Mount Vernon kitchen;

Martha Bradley, in the 1756’s wrote The British Housewife taking recipes from earlier books but reworking them in her own personal style;

Fifteen Cent Dinners for Working-Men’s Families was published in New York in the late 1870s, and similar books could be found at the same time across Europe, a bit more practical for the average laborer. Presumably, creative ways to prepare poor man’s potatoes and turnips gave way to meats and fresh vegetables (hot dogs and boxed mac and cheese had not made their appearance yet);

Amelia Simmons’ American Cookery (1796) one of the first cookbooks printed in America, it made a significant impact on American colonials after the Revolutionary War;

Mary Randolph’s The Virginia Housewife (1824) still considered one of the best for authentic southern cuisine, it includes recipes for barbecued pork, okra soup, and numerous other traditional southern recipes (her brother was married to the daughter of first foodie president Thomas Jefferson, which didn’t hurt);

Lydia Marie Child’s The Frugal Housewife (1829), although a slim volume, it was popular with pioneers and light travelers, as it emphasized affordable, available foods (after all, there were no supermarkets on the frontier);

Eliza Leslie’s Directions for Cookery, In Its Various Branches (1837) the author of several volumes in the nineteenth century, her culinary fame began in 1828 with the publication of Seventy-Five Receipts for Pastry, Cakes, and Sweetmeats, a veritable bible for foodies with sweet tooths; inspiration came largely from the cooking school of Mrs. Goodfellow, a celebrated baker in Philadelphia;

The Confederate Receipt Book: A Compilation of Over One Hundred Receipts, adapted during the Civil War (1863) when Naval blockades prevented many foods from reaching the South,where growing cotton and tobacco was far more common than food;

Charles Ranhofer’s The Epicurean (1894) for over a century Delmonico’s Restaurant in New York City was the epitome of find dining during the late Victorian period, hosting dinners for presidents like Ulysses S. Grant, and writers like Charles Dickens; known for their unique and ornate presentations, the most elaborate of dishes were prepared under the masterful eye of chef Charles Ranhofer; this huge heavily-illustrated tome contains mostly classic French recipes;

Fannie Merritt Farmer’s Boston Cooking-School Cook Book (1896), and thanks to her we have detailed, step-by-step instructions in cookbooks that use standardized measurements for ingredients;

Rufus Estes’ Good Things To Eat (1911) his cookbook was preceded by the first from an African American, namely Robert Roberts’ The House Servant’s Directory from 1827, which featured recipes of the wealthy New England families he was accustomed to working for;

Irma Rombauer’s Joy of Cooking (1931) among the best-selling cookbooks in American publishing history, the Joy of Cooking was originally self-published by Mrs. Rombaue, keeping her busy after her husband died, but with its unexpected initial success, she entered into a contract with a publisher;

Landmark books and chefs which have made a major contribution over the last sixty or seventy years include:

Ruth Graves Wakefield, restaurant owner and the creator of the original Toll House cookie, was a popular cookbook writer in the 1930s;

Although more famous for her marijuana-laced brownies, Alice B. Toklas was actually an accomplished cook, and her mid-twentieth century cookbook made a major impression on cooks of the future; Julia Child’s cookbooks changed America’s basic more conservative cuisine;

One of the premier cookbooks of all time, Georges Auguste Escoffier, revered French chef and considered the father of fine French cuisine, published Le Guide Culinaire, in the early years of the 20th century;

Now, these food facts just might keep you amused, especially for those of you on holiday. Besides you may find one or two so fascinating that you’ll trot them out next time you’re out for dinner, (although I’m not sure if your guests will approve of a couple of them.)

1. In Brazil one of the most popular pizza toppings is peas. Yes, the little green pea. Well, did you know those peas pack a pretty powerful punch? (lots of p’s)

They are not only a great protein source but they’ve got vitamin K, manganese, thiamin, copper, vitamin C, phosphorus and folate. However, their real superpower is that they have a myriad of potent antioxidants including high amounts of a polyphenol called coumestrol – this just may lower your risk of stomach cancer. So don’t just roll those peas around on your plate – dive into them and enjoy their nutritional power.

2: When you buy Virgin Olive Oil you may not be getting exactly what you think. Yup about 70% of the olive oil sold is not actually pure. It’s not that there is another oil added, but the labels lead you to believe you are getting ‘virgin’ or the initial pressing and that’s the best oil to get. Now, in fact, that pure oil has a peppery taste and so the manufacturers would rather sell you oil that is smooth without the pepper – therefore it needs to be processed more. Sometimes the oil will include Lampante Virgin Olive Oil which is, in fact, the lowest grade of virgin olive oil and really not fit for human consumption. In fact, it was originally used as lamp oil but apparently, it takes that peppery taste away.

If you really want the ‘good stuff’ then you need to do your homework – as for me, I’d rather not use oil at all – it’s still a processed food.

3. Did you realise that store-bought 100% ‘real’ orange juice is really 100% artificially flavoured to taste like oranges? You see to make orange juice at home you just squeeze the oranges right? Well to make it commercially you squeeze the oranges but then you have to strip out the oxygen and that’s because you need the liquid to keep for up to a year without spoiling. But now there’s no flavour, so they put the artificial flavour back in.

4. Get prepared for this one if you’re from the West. There is an amusement park in Tokyo, Japan that offers Raw Horse Flesh flavoured ice-cream. I kid you not – there are actual chunks of horse in this ice-cream. And other flavours on offer are cow tongue, octopus and squid.

5. How’s your love of cheese? hopefully, you’re vegan and don’t eat it – but if you do. this is going to tickle the back of your throat. Casu Marzu is a cheese found in Sardinia that is purposely infested with maggots. Casu Marzu literally translates to ‘rotten cheese’ and it’s classified as the world most dangerous cheese.

It’s made from sheep’s milk, soaked in brine, smoked and left to ripen outside in the open, uncovered which allows cheese flies to lay eggs inside it. The eggs hatch into thousands of white transparent maggots and by feeding on the cheese they produce enzymes that promote fermentation and cause fats that make the cheese decompose.

Locals will tell you the spicy, creamy cheese is only okay to eat if the maggots are still moving because once the maggots are dead the cheese has gone bad – decayed to a point that it’s too toxic for human consumption. It’s actually been declared illegal and not in compliance with EU hygienic standards – ha – I wonder why????

New Novel Explores World War II in the

Virginia Cantorna’s Dark on the Inside is a long overdue novel. The Philippines is an often-overlooked topic in World War II studies as well as fiction. Dark on the Inside fills that gap wonderfully, and it helps that Cantorna is herself Filipino, her parents being immigrants to Hawaii from the Philippines after World War II. Consequently, Cantorna grew up hearing stories about the war and her ethnic background makes her the perfect person to tell the compelling story of the Ugale family during the Japanese invasion. https://cooksspot.com

Like most Americans, I was largely clueless about the history of the Philippines. Cantorna puts everything into context quickly for readers so they are never confused about events or the political and historical background of the novel. Many may not know that the United States basically conquered the Philippines by taking it from Spain during the Spanish-American War. While the United States promised the Filipinos their independence, instead, it held the Philippines as a colony with a continual promise of self-government until World War II. Then the Japanese invaded the island.

Dark on the Inside opens with the dramatic moment when the Japanese invade. Cantorna, however, rather than giving us a dramatic invasion scene, shows us how the war affects one family who live on another part of the island where the invasion occurs; they learn the news by word of mouth and the radio. The Ugales consist of an aging mother and father, two daughters, Liling and Glory, who are our main characters, and their two brothers, Bartolome, who is married and lives separately from the family, and Felipe “Boy”, who has gone to work in Hawaii. Liling and Glory are both well into their twenties and past the typical age of marriage. Liling has a fiancé, Raul, in the village, while Glory has a secret lover.

The chapters are told in first person by different characters, but primarily, the narrators are the sisters or the men they are in love with. The war quickly intrudes into the characters’ lives when the Ugale sisters go fishing, hoping to catch a glimpse of the man Glory is in love with. A hairy Japanese soldier and his subordinate come to the river to bathe, frightening the girls, and leading to future conflict.

Conflict exists in the girls’ relationships as well, largely spurred on by the role of religion in the village. When Glory finds herself pregnant by her lover and he then disappears, she is forced to endure the shame and guilt the Catholic priest inflicts on her as she tries to raise her son alone. Meanwhile, Liling worries about her fiancé’s safety after he gets a job driving for the US Army.

Cantorna does a wonderful job of peeling back the layers of all the underlying tension in the novel. For example, the Americano doctor holds a high social standing in the community and both Liling and Glory work for him, and yet, they resent that while he is kind to them, he also seems to feel himself superior to the local “Brownies.” The Japanese, however, are far worse and commit horrific atrocities among the Filipinos, including a nighttime attack upon the Ugales’ village, which becomes known as “The Event.”

The Japanese invasion caused US General Douglas MacArthur to leave the Philippines but utter his famous words, “I shall return.” Later in the novel when he does return with troops, the Filipino characters hate the Japanese so much that one of the American-born Japanese soldiers, who works as a translator for the US Army, gets killed by Liling and Glory’s brother because he is mistaken for one of their Japanese enemies.

Throughout the novel, the various characters are deftly portrayed, and amid the horrors of war, we see moments of internal family conflict as well as tender moments, much of which surround Liling and Glory’s father, who tends to beat his wife and adult children, but then gradually becomes more tender as he develops a special relationship with Glory’s son.

Horror as well as hope for a better day pervade the story. The war destroys some of the characters; when they are not getting killed by bullets or bombs, the living nightmares they have witnessed eat away at them until they slowly lose their minds. Others, however, find in the aftermath of the war that a better life may await them if they immigrate to Hawaii.

Altogether, Dark on the Inside is a novel about strong people who have to overcome tragedy to create better lives for themselves. It is a book to put on the shelf beside modern classics like The Color Purple and The Joy Luck Club that also show people dealing with issues of war, racial prejudice, domestic violence, and ultimately, the hope that can spring from times of trauma. I am so glad that Cantorna has given the Philippines and its people their due by writing this novel and bringing alive a piece of World War II that deserves to be remembered and we can all learn from.
